- 1 can (15.5 oz) pinto beans, rinsed and drained
- 1 can (15.25 oz) whole kernel corn, drained
- 1 package (9.25 oz) corn chips (like Fritos)
- 2 cups shredded Mexican cheese blend
- Optional Toppings: Sliced green onions, sliced black olives, pico de gallo, sour cream, avocado or guacamole, sliced jalapeños
Instructions
- Preheat oven: Set oven to 350°F. Lightly grease a 13×9-inch baking dish.
- Cook the beef and onions: In a skillet over medium heat, heat oil. Add ground beef and chopped onion. Cook until browned and softened, about 6–7 minutes. Drain excess fat.
- Season the filling: Stir in taco seasoning and diced tomatoes with green chiles. Simmer for 2–3 minutes.
- Add beans and corn: Stir in the pinto beans and corn, then remove from heat.
- Layer the casserole: Spread corn chips evenly in the prepared dish. Top with meat mixture, then sprinkle cheese over the top.
- Bake: Bake uncovered for 15–20 minutes, or until cheese is melted and bubbly.
- Serve with toppings: Serve hot with your favorite toppings like sour cream, green onions, or pico de gallo.
