  • 1 packet (1 oz) taco seasoning mix
  • 1 can (10 oz) diced tomatoes with green chiles, undrained
  • 1 can (15.5 oz) pinto beans, rinsed and drained
  • 1 can (15.25 oz) whole kernel corn, drained
  • 1 package (9.25 oz) corn chips (like Fritos)
  • 2 cups shredded Mexican cheese blend
  • Optional Toppings: Sliced green onions, sliced black olives, pico de gallo, sour cream, avocado or guacamole, sliced jalapeños

Instructions

  1. Preheat oven: Set oven to 350°F. Lightly grease a 13×9-inch baking dish.
  2. Cook the beef and onions: In a skillet over medium heat, heat oil. Add ground beef and chopped onion. Cook until browned and softened, about 6–7 minutes. Drain excess fat.
  3. Season the filling: Stir in taco seasoning and diced tomatoes with green chiles. Simmer for 2–3 minutes.
  4. Add beans and corn: Stir in the pinto beans and corn, then remove from heat.
  5. Layer the casserole: Spread corn chips evenly in the prepared dish. Top with meat mixture, then sprinkle cheese over the top.
