  • 1 pound pre-shaved ribeye steak (or ground beef)

  • ½ white onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup sour cream
  • 1 (10.5 oz) can cream of chicken soup (or cream of mushroom)
  • 1 cup milk
  • ½ tablespoon freshly ground black pepper
  • 1 cup freshly grated provolone cheese

Ingredient Tip: Pre-shaved ribeye gives authentic Philly cheesesteak flavor. If substituting with ground beef, drain excess grease after browning.


Instructions

  1. Preheat oven: Set to 350°F. Grease a 9×13-inch casserole dish.
  2. Cook noodles: Prepare egg noodles according to package directions. Drain and set aside.
  3. Brown the steak: In a large skillet over medium-high heat, cook shaved ribeye until browned, about 4-5 minutes. Remove and set aside.
  4. Sauté vegetables: In the same skillet, melt butter. Add onions and peppers. Cook for 4 minutes until softened. Return steak to the skillet. Season with salt and pepper. Cook together for 4 more minutes.
  5. Combine ingredients: In a large bowl, mix noodles with steak, onions, and peppers.
  6. Make the sauce: In a separate bowl, whisk together sour cream, soup, milk, and black pepper. Pour over the noodle mixture and stir well to coat.
  7. Assemble casserole: Spread mixture into the prepared dish. Top with grated provolone.
  8. Bake: Bake uncovered for 20 minutes or until cheese is melted and bubbly.
  9. Rest: Let cool for 5 minutes before serving.
