			For the Chocolate Base:
- ½ cup butter, divided
 - ⅓ cup cocoa powder
 - ¼ cup granulated sugar
 - 1 large egg
 - 2 cups graham cracker crumbs
 - ¾ cup shredded coconut
 
For the Mint Filling:
- ¼ cup unsalted butter, softened
 - 2 cups powdered sugar
 - 2 to 3 tablespoons milk
 - 1 teaspoon mint extract
 - A few drops green food coloring (optional)
 
For the Chocolate Ganache:
- ⅔ cup chocolate chips
 - 2 tablespoons butter
 
Instructions
- Prepare the Pan: Line an 8×8-inch baking dish with foil or parchment paper for easy removal.
 - Make the Chocolate Base: In a microwave-safe bowl, combine ½ cup butter, cocoa powder, and sugar. Microwave for 45 seconds, stir, then heat for another 20–30 seconds until smooth. Let cool for 5 minutes, then whisk in the egg until the mixture thickens slightly. Stir in graham cracker crumbs and shredded coconut until well combined. Press firmly into the bottom of the prepared pan.
 - Prepare the Mint Filling: In a medium bowl, beat softened butter until smooth. Gradually add powdered sugar and 2 tablespoons of milk, mixing until creamy. Add more milk if needed for spreadable consistency. Stir in mint extract and green food coloring (if using). Spread evenly over the chocolate base.
 - Make the Chocolate Ganache: In a microwave-safe bowl, combine chocolate chips and butter. Microwave in 20-second intervals, stirring between each, until melted and smooth. Pour over the mint layer and spread evenly.
 - Chill & Serve: Refrigerate for 2–3 hours until firm. Once set, slice into squares and enjoy!
 
Notes
- For best results, slice with a warm knife to get clean edges.
 - You can also swap the mint extract for peppermint for a bolder flavor.
