  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained

For the Frosting:

  • 1 batch of cream cheese frosting (homemade or store-bought)

Instructions

  1. Prepare the Cake Batter: Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Add vegetable oil and eggs, mixing until combined. Stir in grated carrots, crushed pineapple, vanilla extract, and walnuts (if using).
  2. Bake the Cake: Divide the batter evenly between the two prepared pans. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  3. Frost and Serve: Once cooled, spread a layer of cream cheese frosting over one cake layer. Place the second layer on top and frost the top and sides evenly. Slice and serve!
