- 2 cans (10 oz each) red enchilada sauce
- 2 cups shredded Mexican blend cheese
- Sour cream, for serving
- Salsa, for serving

Ingredient Tip: Use beef, chicken, or bean-and-cheese burritos. For a milder flavor, choose mild enchilada sauce, or spice it up with medium or hot.
Instructions
- Preheat oven: Set oven to 375°F. Lightly grease a 9×13-inch baking dish.
- Arrange burritos: Place six burritos in a single row in the dish. Fit the remaining two sideways to fill the space evenly.
- Add sauce: Pour enchilada sauce evenly over burritos, coating each one well.
- Bake: Cover and bake for 30 minutes, until heated through.
- Add cheese: Sprinkle shredded cheese over the top. Bake uncovered for about 5 more minutes, or until melted and bubbly.
- Serve & garnish: Top each serving with sour cream, salsa, and cilantro if desired. Serve warm.
