Description

  • 4 oz cream cheese (softened)
  • ½ cup sour cream (or plain Greek yogurt)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)

Optional Add-Ins:

  • 1 cup black beans (drained and rinsed)
  • ½ cup corn kernels (fresh or frozen)
  • 1 cup cooked rice or cauliflower rice
  • ½ cup salsa or Rotel tomatoes with chilies

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Slice chicken, bell peppers, and onion. Toss in a large bowl with olive oil and all the spices.
  3. Optional: Mix in any extras like corn, black beans, salsa, or cooked rice.
  4. Spread the mixture evenly in the baking dish. Add spoonfuls of cream cheese and sour cream across the top.
  5. Sprinkle shredded cheese generously over the entire dish.
  6. Bake uncovered for 30–35 minutes or until the chicken reaches 165°F internally.
  7. Broil for 2–3 minutes at the end for a golden, bubbly cheese topping.
  8. Let the casserole rest for 5 minutes before serving. Garnish as desired.
