Description

This Corn Pudding Casserole is a cozy, crowd-pleasing side that combines the natural sweetness of corn with a tender, creamy texture. Made with simple pantry staples like cornmeal, creamed corn, and sour cream, it finishes with a golden top that’s impossible to resist. A perfect side dish for holidays, potlucks, or any comforting dinner.

Ingredients

Scale
  • 8 tablespoons (1 stick) unsalted butter, melted and cooled (plus more for greasing)
  • 2 cups frozen corn kernels, thawed (or fresh/canned – see Notes)
  • 1 cup yellow cornmeal (fine or medium grind)
  • ½ cup all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1½ teaspoons kosher salt
  • ¾ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper (optional, for a mild kick)
  • 3 large eggs
  • 1 cup sour cream
  • 2 (15-ounce) cans creamed corn
  • Honey, for optional drizzling

Instructions

  1. Preheat oven: Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter.
  2. Whisk dry ingredients: In a medium bowl, mix together the cornmeal, flour, sugar, baking powder, salt, garlic powder, and cayenne pepper (if using).
  3. Mix the wet ingredients: In a large bowl, beat the eggs until broken up. Stir in the sour cream and both cans of creamed corn.
  4. Combine and fold: Add the dry mixture, melted butter, and thawed corn to the wet mixture. Stir until just combined.
  5. Pour and bake: Transfer the batter into the prepared dish and spread evenly. Bake uncovered for 50–60 minutes, or until the center is set and a toothpick comes out clean.
  6. Rest and serve: Let rest for 5–10 minutes before serving. Drizzle with honey for a sweet finish if desired.

Notes

  • Fresh or Canned Corn: Swap the frozen corn with 2 cups of fresh corn or 1 (15 oz) can of drained corn.
  • Spicy Variation: Add diced jalapeños or increase the cayenne for more heat.
  • Storage: Store leftovers in an airtight container for up to 3 days. Reheat in the oven or microwave until warmed through.
  • Perfect Pairings: This side dish complements roasted meats, grilled chicken, and holiday mains beautifully.
