Casserole:

  • 1 lb lean ground beef (96/4 or similar)
  • 1 lb russet potatoes, chopped (skin on, bite-sized)
  • ½ white onion, chopped
  • ¼ cup water
  • 1 tsp olive oil
  • 2 tsp yellow mustard
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese (about 4 oz)

Big Mac Sauce:

  • ¼ cup mayonnaise
  • ¼ cup ketchup
  • ¼ cup chopped dill pickles
  • 1 tbsp dill pickle juice

Optional Toppings:

  • 1 vine-ripened tomato, chopped
  • Handful of shredded iceberg lettuce
  • Handful of chopped white onion
  • ¼ cup dill pickle chips

Instructions

  1. Preheat oven: Set to 375°F and grease a medium-sized baking dish.
  2. Cook the potatoes: In a skillet, heat olive oil over medium. Add chopped potatoes and ¼ cup water. Season with salt and pepper. Cook 5-10 minutes until just tender. Transfer to baking dish.
  3. Brown the beef: In the same skillet, cook ground beef and onions until browned and soft. Drain grease. Stir in mustard, garlic powder, onion powder, salt, and pepper.
  4. Combine and bake: Mix beef with potatoes in the baking dish. Top with shredded cheddar. Cover with foil and bake 15 minutes, or until cheese is bubbly.
  5. Make the Big Mac sauce: In a bowl, mix mayo, ketchup, chopped pickles, and pickle juice. Chill until serving.
  6. Add toppings and serve: Remove foil. Drizzle with Big Mac sauce and sprinkle with lettuce, tomato, onion, and pickle chips. Serve warm.
