Description
This Best Pineapple Casserole is a Southern comfort classic that brings together sweet pineapple, sharp cheddar cheese, and a buttery cracker topping. Creamy, crunchy, and bursting with flavor, perfect as a holiday side dish or even a warm dessert.
Ingredients
Scale
- 1 can (20 oz) crushed pineapple, drained
- 1 can (20 oz) pineapple chunks, drained (reserve ¼ cup juice)
- 1 cup white sugar
- 6 tablespoons all-purpose flour
- 2 cups shredded sharp cheddar cheese
- 1 sleeve buttery round crackers (like Ritz), crushed
- ½ cup (1 stick) melted butter
Instructions
- Preheat Oven: Preheat to 350°F (175°C) and grease a medium baking dish.
- Make Filling: In a large bowl, combine crushed pineapple, pineapple chunks, sugar, flour, and cheddar. Stir well, then spread evenly into the prepared dish.
- Make Topping: In a separate bowl, mix crushed crackers with melted butter until evenly coated. Sprinkle over the pineapple mixture.
- Bake: Bake uncovered for 25–30 minutes, until the topping is golden and the edges are bubbly.
- Cool and Serve: Let rest 5–10 minutes before serving warm as a side dish or dessert.
Notes
Use fresh pineapple if preferred, drain well and reduce sugar slightly. To make dairy-free, omit cheese and use plant-based butter. You can prepare the filling ahead of time and add the topping just before baking.
