Filling:
- 2 cans (20 oz each) crushed pineapple, drained well
- ¾ cup granulated sugar
- 2 tablespoons all-purpose flour
- 1½ cups sharp cheddar cheese, shredded

Topping:
- 1 sleeve Ritz crackers (~30 crackers), crushed
- ½ cup (1 stick) unsalted butter, melted
Instructions
- Preheat the Oven: Preheat to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
- Prepare the Filling: In a large bowl, mix drained pineapple, sugar, flour, and cheddar cheese. If using vanilla, add now. Stir until fully combined.
- Fill the Dish: Pour the pineapple mixture into the prepared baking dish and spread evenly with a spatula.
- Add the Topping: In another bowl, mix crushed Ritz crackers with melted butter until fully coated. Sprinkle evenly over filling.
- Bake: Bake for 30–35 minutes until topping is golden and edges are bubbly.
- Cool & Serve: Let cool for 5–10 minutes. Serve warm as a side dish or sweet-savory brunch item.
